Dill is a tall, feathery annual, Anethum graveolens, in the parsley family. Both Dill Seed and Weed (dried leaves) come from the same plant. The seed is light brown, winged and oval, with one side flat, with two ridges. The other side is convex with three ridges and three oil channels. Dill is mainly used in pickling, It is especially popular in Russia and Scandinavia, Its flavour works well in sour cream and yogurt sauces. It is also used in soups, salad dressing, cottage and cream cheese. |
